What is Teff?

Teff. It’s a funny word but such a nutritious little grain!

It’s grown in Ethiopia. It’s hardy, drought resistant, and requires very little land to grow. It’s known to handle almost anything this planet can dish out and it’s gluten-free!

Many believe that Teff is responsible for the health and stamina of Ethiopian distance runners! It’s high in iron, protein, calcium, and magnesium, and it’s easy to digest. It’s also an excellent flour to use in the sourdough world! Those who have made a sourdough starter from scratch, just using teff flour and water, have found that it doubles very rapidly!

In Ethiopia it’s a stable crop and used to make injera, a delicious sourdough flatbread, which is also Ethiopia’s national bread! Here’s a video on how to make vegan, gluten-free injera! …

Although Teff has been grown for thousands of years, it’s just recently that many are taking note of it, especially those who have an intolerance to gluten. Here at Simple Kneads we use this tiny gluten-free ancient grain for it’s superior nutritional quality!
