Teff. It’s a funny word but such a nutritious little grain!
It’s grown in Ethiopia. It’s hardy, drought resistant, and requires very little land to grow. It’s known to handle almost anything this planet can dish out and it’s gluten-free!
Many believe that Teff is responsible for the health and stamina of Ethiopian distance runners! It’s high in iron, protein, calcium, and magnesium, and it’s easy to digest. It’s also an excellent flour to use in the sourdough world! Those who have made a sourdough starter from scratch, just using teff flour and water, have found that it doubles very rapidly!
